Pear Crumble

On a cold winter's evening, I need crumble. It soothes something in me and warms my toes! Here's my recipe for a pear crumble. A little different from the usual apple, but it was lovely, especially with mountains of cream. What you'll need Makes four servings. 2 pears, sliced in half lengthways, seeds removed. I used Bosc variety, as they keep there shape better once baked. 1 cup plain flour 1/2 cup raw rolled oats (porridge oats) 150g butter, cubed and at room temperature 100g caster sugar pinch of salt Cream to serve What to do 1. Preheat the oven to 180 degrees Celsius. 2. I used individual baking dishes, but you could bake these pears in one large baking tray. 3. Make the crumble mix. Place the flour, oats, sugar and salt in a bowl. Throw in the cubed butter. With your fingers, rub the butter into the other ingredients until it resembles course breadcrumbs. 4. Sticky Lemongrass and Lime Chicken

This chicken and its marinade are a little addictive. The sticky, salty and spicy ingredients taste so fantastic together. Reduce it over low heat in a small saucepan to make a heavenly sauce for your chicken at the table. What you'll need Serves four 8 chicken thighs, bones removed, skin on. Alternatively use 12 chicken drumsticks or 4 chicken breast. For the marinade/sauce 2 tablespoons honey, plus one tablespoon extra 2 stalks young lemon grass, bruised with the back of your knife, and chopped finely  (or if you don't like to eat lemongrass, leave it in large pieces and you can remove it from the sauce before you eat it) 2 cloves garlic, peeled and finely chopped 3cm-sized piece of ginger, peeled and grated Juice and zest of 2 limes 1 teaspoon chilli powder (or more if you like it spicy) 1 tablespoon tap water What to do 1. Cheesy Sausage Rolls

Three ingredient snack food recipe coming up. Gather ready-made puff pastry, sausages and some grated cheese from your nearest grocery store and turn it into these sausage rolls. Five minutes preparation time, 15 minutes cooking time and you have a 'homemade', filling and tasty snack or lunch if served with salad or vegetables. These sausage rolls could be served at a party or as 'in front of the TV' snacks during the football. What you'll need 1 packet of puff pastry, approx 250g (from your supermarket fridge section) 15 sausages 1 cup grated cheese of your choice.  What to do lol 1. Preheat your oven to 180 degrees Celsius. hjç+-stick baking paper. 3. Lay out the piece of pastry onto a flat, clean surface. Gently slice the pastry into 15 long slices, approximately 4cm wide and about 30 cm long. 4. Chocolate Caramel Coconut Slice

Behold this amazing piece of sweet goodness! It contains some of my favourite ingredients - chocolate, caramel and coconut. Combined together, these ingredients make this divine little slice. Word of warning - this slice is very sweet, so you only need a very small square to satisfy. A 2cm square is plenty, and will ensure that the slice stretches far. What you'll need Makes approximately 40 small pieces of slice, depending on how large you cut the pieces. Base 250g plain flour, sifted 125g brown sugar  125g desiccated coconut 125g butter, melted Filling 400g sweetened condensed milk 2 tablespoons golden syrup or honey 60g butter, melted Topping 1 tablespoon thickened cream 125g dark cooking chocolate, broken into bits What to do 1. Preheat oven to 180°Celsius. Grease and line a 30cm x 20cm baking tin. 2. Combine the ingredients for the base in a large bowl. Mix well. Pour into the tin and press the mixture with your fingers. Spaghetti Nests

  This is really a serving idea, rather than a recipe, but it's an excellent way to use up extra pasta - even if said pasta is a bit dried up and stuck together. Just refresh already cooked pasta in some boiling water for a minute then drain. What you will need: Serves 4 (3 nests each, 12 in all) 300g dry spaghetti, cooked and drained 750g jar of prepared spaghetti sauce 1 cup of grated parmesan cheese 1 cup grated mozzarella Fresh basil, finely chopped 12 pieces of non-stick baking paper, measuring  30cm by 30cm What to do: 1. Preheat the oven to 180 degrees Celsius.    2. Prepare the pasta nests. Arrange all the ingredients on the bench. 3. Place a rough handful of pasta into the middle of one sheet of      baking paper. Generously spoon over some of the prepared pasta     sauce, sprinkle it with parmesan cheese, mozzarella and basil.  Now bring the corners of the baking paper together, making sure        that none of the filling

Honey Soy Salmon Parcels

I love this recipe because it is so simple and quick to make. It tastes amazing and it's also really healthy and great if you're looking for a light, meat free meal. What you will need: serves four Four pieces of salmon, skin off, about 100 grams each 2 cups of fresh or frozen beans 1 cup of fresh or frozen peas 2 teaspoons of honey 1 tablespoon of soy sauce Olive oil 1 small finger of ginger, peeled and finely chopped (optional) Rice or noodles t o serve (optional) What to do: 1. Preheat the oven to 180 degrees Celsius. 2. On an oven tray, lay four pieces of aluminium foil approximately                    20cm by 20cm. Lightly grease each piece of foil with some oil      using a pastry brush. Gently turn up the edges of each piece of      foil so that your sauce will not run over when you pour it on.  3. If using fresh beans, top and tail them . If using frozen vegetables     put the beans and peas in a colander and run some
